Warm, soft feta with oregano is a wonderful side dish to grilled meats or on a mezé table. Easy to make, and you can add almost anything you want on top of the feta; a tomato slice, some bell pepper strips, mashed garlic, a little shredded chilli … The most important thing is that you use a really good, Greek feta cheese.
We have made a simple variety here, you hardly need a recipe, but here it comes:
- A piece of aluminium foil, drizzled with olive oil
- A piece of feta cheese
- freshly ground pepper
- more olive oil
Place the cheese in the middle of the foil, sprinkle with the spices. The Tabasco should not dominate the taste, so be careful, a few drops is enough. Sprinkle over a little oil to finish and wrap. Bake at 200 degrees C for 15 to 20 minutes, or, if you are barbequing, place the feta over indirect heat. Open the parcels at the table. Mmm, what a scent!
